Eating Characteristics: Flesh has a sweet, nutty flavour with a creamy texture. Its edible, thin skin softens completely when cooked, eliminating the need for peeling, but we still often remove the skin with a vegetable peeler.
Best Uses: pies, soups, purées, stews, good sweetener for quick breads like scones. Think of red kuri squash like a pumpkin replacement with sweeter flavour and smoother stringless texture.
Curing: This squash can be eaten right from the field, but if you want to store it for a while, it should be first cured for two weeks in a warm and dry location like a sunny window sill.
Storage Life: 3 to 4 months in cool dry conditions, 10-15ºC at 50-70% humidity.
