Eating Characteristics: Flesh is bright yellow with a very sweet flavour, often described as nutty and dry, like a cross between pumpkin and sweet potato. When cubed, this squash holds its shape quite well during baking.
Best Uses: soups, purées, roasting, curries, stews, grated raw into salads, good substitute for sweet potatoes
Curing: For best flavour and storage life, allow squash to cure for 2 weeks in a warm and dry location like a sunny window sill.
Storage Life: 4 to 6 months in cool dry conditions, 10-15ºC at 50-70% humidity.
